Job summary

sbe is seeking a Sushi Cook for its Sushi/Katsuya concept in San Diego. The role focuses on preparing ingredients, assembling dishes per recipes, and maintaining hygiene and speed in a demanding, guest-centric setting.

You will expertly cut, wrap, and present sushi while ensuring food safety, inventory control, and collaboration with wait staff to meet special requests and dietary needs.

Qualifications

• Minimum two years' experience in a contemporary dining restaurant.
• Must be at least 18 years old.
• Ability to work in a fast-paced, high-pressure environment.

Responsibilities

• Expertly cutting, slicing, and filleting different types of fish.
• Inspecting the quality of fruits, vegetables, and fish used in sushi and informing the Executive Chef when quality is sub-standard.
• Preparing various types of sushi dishes according to guidelines on quality, portion size, presentation, and food safety.
• Maintaining a clean work environment in order to prevent food contamination.
• Regularly taking inventory of food supplies and other products.
• Reporting any problems with kitchen equipment to the manager on duty.
• Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use.
• Communicating with wait staff to ensure that special requests and food allergy considerations are met.
• Must be a highly organized individual with the ability to handle numerous tasks at a time
• Ability to work in a fast-paced, high-pressure environment
• Has excellent verbal and written communication skills
• Maintains a 'sense of urgency' attitude for the completion of responsibilities/tasks
