Qualifications

• Previous sushi chef or sushi cook experience in a high-volume restaurant.
• Expertise in sushi preparation and knife skills.
• Strong focus on presentation, freshness, and quality.

Responsibilities

• Prepare and execute all sushi, sashimi, and maki rolls to high standards.
• Maintain deep knowledge of fish quality, cutting techniques, and prep.
• Ensure consistency in knife cuts, portioning, and plating.
• Follow food safety, sanitation, and HACCP guidelines for raw fish.
• Daily mise en place including ingredients, rice, and sauces.
• Maintain a clean, organized sushi station for high-volume service.
• Monitor inventory of seafood and other sushi-related items to ensure freshness.
• Collaborate with BOH and FOH teams for a seamless dining experience.
• Engage with guests, offering sushi recommendations when appropriate.
• Perform tasks assigned by Chefs and Kitchen Leadership with professionalism.
