Job summary

Jim 'N Nick's Community Bar-B-Q is seeking a hands-on pitmaster to own the pit and meat operation, run smokers with skill, cut and portion to spec, and ensure the quality of every pound of smoked meat leaving the station. You will manage inventory and food waste in the pit and meat area, and uphold safety and sanitation standards in a fast-paced kitchen.

You should bring experience as pitmaster, meat cutter, line cook, expediter, or prep cook, and you take pride in the craft.

Qualifications

• Experience as pitmaster, meat cutter, line cook, expediter or prep cook is required.
• You are disciplined, consistent, and proud of the craft.
• Low and slow cooking mindset reflected in work ethic and results.

Responsibilities

• Own the pit and meat operation: run smokers with skill and consistency, cut and portion to spec, and monitor quality of every pound of smoked meat that leaves your station.
• Manage inventory and food waste in the pit and meat area, follow process and procedure to the letter, and uphold safety and sanitation standards.
