Federal Bureau of Prisons in Oakdale, LA, seeks a Cook Supervisor responsible for preparing meats, poultry, seafood, vegetables, and sauces for regular and modified diet menus. You will cook and portion meals following standardized recipes and coordinate full meal preparation.

Experience with large-quantity cooking and knowledge of special diets (high protein, low cholesterol, low fat, calorie-restricted, sodium-restricted) is essential.

Formación

• Must meet Barely Acceptable level on screen-out elements: Ability to supervise and Aptitude for work with prisoners.
• Applicants must have received sufficient training and experience to perform duties.
• Certification or training in food protection is required as part of the selective factors.

Responsabilidades

• Independently prepare all types of meats, poultry, seafood, vegetables, fruits, sauces, and gravies for regular and modified diet menus.
• Prepare, cook, season, and portion food for all meals by following standardized recipes.
• Plan and prepare or coordinate the preparation of entire meals.
• Make substitutions and adjustments in food preparation procedures and seasoning.
