Xanterra Travel Collection is hiring a Kitchen Manager at Grand Canyon National Park South Rim. The role oversees Maswik kitchen operations, with a 40-hour week, full-time year-round schedule, and housing availability. Pay is $54,080 annually; private one-bedroom apartment housing available for $352 per month.

Qualifications

• Three years supervisory or lead cook experience in high-volume dining or institutional setting with progressive cooking/menu development.
• Ability to train kitchen positions across all areas of operation.
• Proven written and verbal communication skills with managers, NPS Concessions and Public Health.
• Interpersonal skills with F&B managers, FOH staff and guests.
• Experience in menu development, production records, scheduling and cost controls.
• Ability to pass ServSafe food sanitation and train staff on the program.
• Proficiency in Word and Excel; experience with Cloud Suite inventory software.

Responsibilities

• Manage food preparations and daily features for Food Court, Mobile Food Service Vehicles, Pizza Pub, and Banquet Operations; maintain quality and presentation.
• Oversee ordering, rotation, storage, and inventory to minimize waste and shrink.
• Recommend Unit Kitchen and Mobile Food Service capital expenditures annually.
• Maintain and utilize the kitchen position program and staff scheduling.
• Coordinate menus, specials, and banquets with Culinary Services leadership.
