Job summary

Xanterra is seeking a Senior Assistant Restaurant Manager to lead a high-volume food and beverage operation at the Maswik complex in Grand Canyon National Park. You will work closely with unit leaders to drive guest service excellence, coach managers and hourly staff, and manage labor, inventory, and beverage programs in a fast-paced setting.

The role requires strong leadership, F&B knowledge, and the ability to mentor a diverse team while ensuring adherence to safety and quality standards.

Qualifications

• Must be available to work nights, weekends and holidays.
• At least three years of high-volume, full service restaurant management experience.
• Experience with and knowledge of all front of the house positions with the ability to quickly assess service situation(s) during the meal period(s).
• Beer, Liquor and Wine knowledge is a must.
• Experience managing the financial aspects of a restaurant
• Ability to train and evaluate staff performance in a full-service restaurant.
• Demonstrated positive leadership skills with the ability to drive employee engagement.
• Strong interpersonal and conflict resolution skills.
• Knowledge of wines, wine service, wine selling techniques and ability to pass knowledge on to staff.
• Ability to pass ServSafe Manager course and TIPS training within 90 days of employment.
• Competency using Outlook, Word and Excel.
• Experience with computerized POS systems, draft system and advanced reservations systems.

Responsibilities

• Oversee high-volume F&B operations with the Unit Manager and Kitchen Manager.
• Coordinate events, banquets, and large groups.
• Interact with guests, staff, and officials to maintain service quality.
• Control labor and operating costs through scheduling and inventory controls.
• Coach and develop hourly staff and assistant managers.
• Ensure compliance with policies and safety standards.
• Lead training programs and cost-control measures for the department.
• Manage beverage programs and cost controls.
• Lead performance reviews for hourly staff.
• Maintain sanitation and front-of-house standards.
