Qualifications

• A.S. or equivalent experience is required.
• Minimum 3–5 years of progressive culinary/kitchen management experience.
• High-volume, complex foodservice operations experience is highly desirable.
• Institutional and batch cooking experience.
• Hands-on chef experience is a must.
• Knowledge of food and catering trends, focus on quality, sanitation, and cost controls.
• Computer proficiency including Word, Excel, PowerPoint, Outlook, email, and internet.
• ServSafe certification is highly desirable.

Responsibilities

• Plans regular and modified menus according to guidelines.
• Follows standardized recipes, portioning and presentation standards; uses daily production worksheets and waste logs; tastes meals for quality.
• Trains kitchen staff in food preparation, safety, sanitation, and equipment operation per Company and regulatory standards.
• Maintains cleaning and maintenance schedules for equipment and facilities; ensures adherence by staff.
• Maintains inventory of food and non-food supplies within guidelines; ensures product availability.
• Decides on leftover food utilization within Company guidelines.
• Complies with health and sanitation regulations and audits.
• Adheres to safety policies; participates in meetings and staff development.
