Job summary

As Executive Chef, you will oversee kitchen operations, direct meal preparation, and maintain a safe, sanitary work environment in alignment with corporate programs and guidelines.

Qualifications

• A.S. or equivalent experience is required.
• 5+ years of progressive culinary/kitchen management experience is preferred.
• High volume, complex foodservice operations experience is highly desirable.
• Institutional and batch cooking experiences are preferred.
• Hands‑on chef experience is a must.
• Knowledge of trends in food and catering, with focus on quality, production, sanitation, and cost controls.
• Experience with computers; MS Office (Word, Excel, PowerPoint), Outlook, email and Internet.

Responsibilities

• Plans regular and modified menus according to established guidelines.
• Follows standardized recipes, portioning and presentation standards; uses daily production worksheets and waste logs.
• Trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation per company and regulatory standards.
• Establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas.
• Maintains inventory of food and non-food supplies within guidelines and ensures availability of necessary products.
• Makes decisions regarding leftover food utilization within company guidelines.
• Complies with federal, state, and local health and sanitation regulations evidenced by audits.
• Follows safety policies and participates in department meetings and staff development.
