Position summary
The Dietary Manager is a key leadership position responsible for the successful operation of Dining Services. The Dietary Manager prepares meals and manages the operations of the Dining Services Department, including staffing, food ordering and accountability, preparation, menu planning, food delivery, and sanitation, in accordance with health department regulations. The Director ensures client and customer satisfaction through efficient, cost-effective management that meets and exceeds expectations. They also assist in maintaining a positive physical and social environment for residents.
Essential Duties and Responsibilities:
- Supervise, assign duties, and direct the work of all food service department employees, maintaining full accountability for dining services.
- Ensure equipment maintenance and that work areas are clean, safe, and orderly. Adhere to procedures regarding infection control, food-borne illness prevention, chemical handling, fire safety, and sanitation, addressing noncompliance promptly.
- Maintain food costs within budgetary constraints and enforce strict inventory control.
- Demonstrate independent judgment and discretion.
- Interview, make hiring recommendations, and orient new staff.
- Schedule and reschedule staff using independent judgment, considering requests for time off or schedule modifications.
- Track attendance and implement disciplinary actions when necessary.
- Communicate and enforce policies, including rules of conduct, safety, sanitation, and HR policies, and recommend corrective actions as needed.
- Evaluate employee performance and recommend changes to employment conditions based on evaluations.
- Conduct dietary QA audits quarterly.
- Plan community and individual resident menus in coordination with primary care providers, medical staff, and community staff. Organize special events as needed.
- Ensure meals are prepared according to menus and recipes, presented attractively, and meet nutritional needs, including snacks for residents with special dietary requirements.
- Supervise proper storage, defrosting, and preparation of food following safe and sanitary procedures.
- Ensure excellent customer service for internal and external customers.
- Perform duties courteously and professionally, prioritizing resident safety and satisfaction.
- Greet visitors in a friendly manner, including residents' families, prospective residents, referral sources, vendors, and regulators.
- Answer phones professionally, adhering to community standards.
- Ensure compliance with regulations regarding residents' rights.
- Ensure all employees attend required in-service training and provide additional training as needed.
- Attend training sessions as directed by supervisors.
