SUMMARY
The Dietary Supervisor is responsible for providing residents with quality, affordable meals in a warm, friendly environment while increasing the profitability of Capri Dining Services, LLC. This is a hands-on position that will directly oversee all aspects of culinary services provided to our residents.
ESSENTIAL RESPONSIBILITIES
Include the following; other duties may be assigned:
- Manage meal service in dining areas for residents, guests, and for special functions, including setup, service, and cleanup.
- Schedule, assign, train, and manage all wait staff personnel to ensure adequate staffing at all times.
- Supervise serving of meals.
- Accept on-call and emergency duties/responsibilities.
- Make frequent inspections of all work, storage, and serving areas to ensure compliance with policies and procedures.
- Recommend changes in techniques or procedures governing service areas.
- Coordinate setup and cleanup of catered functions for residents, guests, and staff.
- Address residents' dining concerns and attend to their needs to facilitate good communication.
- Maintain records of work assignments and menu selections.
- Instruct employees in equipment use and sanitation methods.
- Ensure the appearance, cleanliness, and safety of dining room areas, equipment, and fixtures.
- Conduct routine sanitation, safety, and maintenance inspections of equipment and work areas, ensuring compliance with cleaning standards.
- Interview candidates, conduct performance evaluations, discipline, and recommend promotions, transfers, or discharges.
- Ensure POS systems are properly closed out at the end of shifts, with tables entered correctly and payments processed.
- Update menus weekly in the POS system, including theme meals or specials.
- Assist in implementing established cost containment procedures.
- May serve as wait staff to ensure timely and efficient service.
- May fill in for the Assistant Director of Dining Services in their absence.
- Acknowledge, understand, and support residents and the Resident Bill of Rights.
- Maintain confidentiality of residents and staff information.
- Comply with local, state, and federal regulations.
- Attend and participate in committee meetings, training sessions, in-services, and community events as required.
- Perform all other duties as assigned.
QUALIFICATIONS
- Minimum of two years of progressively responsible experience in food service, including at least six months of supervisory experience.
- Knowledge of quality food service preparation, techniques, and standards.
- Knowledge of state health and safety regulations.
- Knowledge of supervisory practices and principles.
- Effective written and verbal communication skills.
- Proficiency in Microsoft Office (Word and Excel) and other industry-related software.
