Job description

SUMMARY

The Dietary Supervisor is responsible for providing residents with quality, affordable meals in a warm, friendly environment while increasing the profitability of Capri Dining Services, LLC. This is a hands-on position that will directly oversee all aspects of culinary services provided to our residents.

ESSENTIAL RESPONSIBILITIES

include the following; other duties may be assigned:

  1. Manage meal service in dining areas for residents, guests, and for special functions, including set-up, service, and clean-up.
  2. Schedule, assign, train, and manage all wait staff personnel, ensuring adequate staffing at all times.
  3. Supervise serving of meals.
  4. Accept on-call and emergency duties/responsibilities.
  5. Make frequent inspections of all work, storage, and serving areas to determine and maintain compliance with all policies and procedures governing these areas.
  6. Recommend changes in techniques or procedures governing service areas.
  7. Coordinate set-up and cleanup of catered functions for residents, guests, and staff.
  8. Address residents' dining concerns and attend to residents' needs to facilitate good communication.
  9. Maintain records of work assignments and menu selection.
  10. Instruct employees in equipment use and sanitation methods.
  11. Ensure the appearance, cleanliness, and safety of dining room areas, equipment, and fixtures.
  12. Conduct routine sanitation, safety, and maintenance inspections of equipment and work areas, ensuring compliance with cleaning standards of all food preparation and service areas.
  13. Interview candidates for hire, conduct performance evaluations, discipline, and recommend promotions, transfers, and/or discharge.
  14. Ensure POS is properly closed out at the end of the shift, with all tables entered correctly in the software along with proper payment.
  15. Update menus weekly in the POS system, including theme meals or specials.
  16. Assist in the implementation of established cost containment procedures.
  17. May serve as wait staff to ensure timely and efficient service of residents, guests, or staff.
  18. Fill in for the Assistant Director of Dining Services in their absence if needed.
  19. Acknowledge, comprehend, and support the residents and the Resident Bill of Rights.
  20. Maintain confidentiality of both residents and staff.
  21. Comply with all local, state, and federal regulations.
  22. Attend and participate in committee meetings, trainings, in-services, and community events as required.
  23. Perform all other duties as assigned.
QUALIFICATIONS
  • A minimum of two years of progressively responsible experience in a food service operation, including six months of supervisory experience.
  • Knowledge of quality food service preparation, techniques, and standards.
  • Knowledge of state health and safety regulations and requirements.
  • Knowledge of supervisory practices and principles.
  • Ability to communicate effectively via written or verbal methods.
  • Computer proficiency, including Microsoft Office Word and Excel, as well as other industry-related software.
