Job summary

Princess Cruises is seeking an experienced Sushi Chef (MMC) stationed at Magsaysay, Philippines, to join the Galley team on a fixed term contract. The role requires extensive sushi production knowledge and leadership to train diverse crew members, with strong English communication and food safety focus.

The successful candidate will oversee quality in maki, nigiri and sashimi, uphold standards, and contribute to guest experiences aboard the ship.

Qualifications

• Minimum five years in the galley and at least one year as a sushi chef.
• Formal culinary arts qualification from a recognized institution.
• Strong supervision and training abilities across diverse teams, fluent English.
• Knowledge of sushi, nigiri, temaki, and sashimi production.

Responsibilities

• Prepare maki, nigiri, and sashimi per guidelines for quality and safety.
• Follow trends; maintain knowledge of ingredients and flavors.
• Master sushi-rolling techniques and present visually appealing plates.
• Apply food safety regs and monitor ingredients quality.
• Inventory equipment and report issues to Food & Beverage.
• Maintain clean work area to prevent contamination and ensure utensils sterilized.
• Train team on knife skills and production methods.
• Communicate finished dishes and ingredients to guests and team.
