Job summary

Princess Cruises is seeking a Chef de Partie Butcher for the MMC at Magsaysay, Philippines. This fixed term contract role leads a butchery station, ensuring quality, schedule adherence, and cost control under the Chief Butcher. Strong English, HACCP knowledge, and cruise experience are highly valued.

You will train staff, manage recipes, and coordinate with the Executive Chef to deliver exceptional onboard dining and guest experiences.

Qualifications

• Formal qualification in Butchery from a recognized training institution.
• At least 5 years of experience in large butchery operations; cruise ship experience preferred.
• Experience with different meats and cuts; seafood processing experience preferred.
• Complete knowledge of USPH/HACCP, food safety and waste management.
• Strong English skills, both verbal and written.
• Guest service mindset and ability to deliver outstanding service.

Responsibilities

• Supervises production in the butchery station, ensuring quality and adherence to recipes and schedules.
• Assists with loading and storage as scheduled.
• Maintains section recipe files for staff.
• Creates daily production schedules under the Chief Butcher.
• Monitors ingredient consumption and production needs.
• Performs spot checks on supplies and par levels.
• Participates in daily briefings with the Chief Butcher.
• Supervises butchery staff during operations.
• Controls food consumption and meets cost targets.
• Trains staff in production methods and culinary techniques.
• Informs maintenance when equipment malfunctions.
