Key Responsibilities
- Ensure product quality by monitoring tasting panels and inspecting mise en place during preparation.
- Supervise food production, give instructions to maintain standards, and minimize spoilage.
- Oversee product delivery, ensuring quality, consistency, and proper presentation.
- Supervise galley staff during operations, ensuring compliance with safety and storage standards.
- Participate in daily meetings and organize staff meetings to communicate menus, production, and events.
- Control food consumption and ensure cost targets are met through portion control and batch cooking.
- Think strategically with a focus on financial results.
- Train staff in production methods, culinary techniques, and presentation standards.
- Provide training and orientation for new galley staff.
- Maintain knowledge of health standards and ensure compliance with public health policies.
Skills, Knowledge & Expertise
- At least five years of culinary experience, including two years as Demi Chef de Partie, preferably in high-volume international hotels, resorts, or cruise ships.
- Deep knowledge of international cuisines, especially Western/Continental, with understanding of USPH/HACCP standards.
- Formal culinary qualification from a recognized institution.
- Ability to work with and supervise multicultural teams.
- Proficiency in MS Office and related software.
- Excellent communication skills in English, both verbal and written.
