Job summary

Mandarin Oriental Makati, a forthcoming 5‑star luxury hotel, seeks an experienced Assistant Chief Steward for its pre‑opening team in Manila. You will set stewarding standards, train staff, and ensure readiness across kitchens and back‑of‑house operations.

Responsibilities include supervising daily stewarding, inventory and safety compliance (HACCP), recruiting and coaching, and collaborating with the Executive Chef, F&B and Engineering to deliver exceptional service.

Qualifications

• Minimum of 3–5 years’ experience in stewarding management within a luxury hotel or resort.
• Strong knowledge of hygiene, sanitation, and HACCP standards.
• Proven leadership and team management skills.
• Experience in pre‑opening hotel operations preferred.
• Excellent organizational and communication abilities.
• Ability to work under pressure and adapt to dynamic pre‑opening requirements.

Responsibilities

• Pre-Opening Setup: develop stewarding policies, procedures, and SOPs; assist in equipment procurement and setup.
• Operational Excellence: supervise daily stewarding operations, ensure sanitation standards, monitor supplies and equipment.
• Team Leadership: recruit, train, and coach stewarding staff; foster teamwork and accountability.
• Collaboration: work with Executive Chef, F&B, and Engineering; ensure HACCP compliance.
• Sustainability & Cost Control: implement eco-friendly practices and manage stewarding costs.
