Job summary

Mandarin Oriental Makati is launching a new luxury property in Manila and seeks a Steward Supervisor to lead the pre-opening stewarding team. You will supervise dishwashing, cleaning, and sanitation across kitchens and back-of-house areas, helping establish operational systems and staff training for a flawless opening.

Ideal candidates bring 2–3 years in stewarding with at least 1 year in supervision, strong hygiene knowledge, and a record of delivering high standards in luxury environments.

Qualifications

• 2–3 years in stewarding or kitchen operations with at least 1 year in a supervisory role.
• Strong knowledge of hygiene, sanitation, and food safety standards.
• Experience in luxury hotels or pre-opening is an advantage.

Responsibilities

• Assist in setting up stewarding areas, equipment, and operating procedures.
• Support recruitment, onboarding, and training of stewarding staff.
• Ensure readiness of stewarding operations for hotel opening.
• Supervise stewarding team members in dishwashing, cleaning, and waste management.
• Maintain cleanliness and sanitation standards in all kitchens and back-of-house areas.
• Monitor the use and care of cleaning supplies, chemicals, and equipment.
• Assign tasks and schedules to stewarding staff to ensure smooth operations.
• Provide coaching and guidance to team members to uphold standards.
• Promote teamwork, discipline, and a positive work environment.
• Ensure adherence to HACCP, food safety, and hotel hygiene standards.
• Report and address any maintenance or safety issues promptly.
• Support sustainability initiatives in waste reduction and resource management.
• Work closely with culinary and F&B teams to support operational needs.
