Job summary

The Role

The Steward Supervisor will be a key member of the pre‑opening team, responsible for supervising stewarding operations to ensure the highest standards of cleanliness, hygiene, and efficiency across all kitchens and back‑of‑house areas. This role will help establish operational systems, train team members, and support the successful launch of Mandarin Oriental Makati.

Key Responsibilities

Pre‑Opening Preparation

• Assist in setting up stewarding areas, equipment, and operating procedures.
• Support the recruitment, onboarding, and training of stewarding staff.
• Ensure readiness of stewarding operations for hotel opening.

Daily Operations

• Supervise stewarding team members in dishwashing, cleaning, and waste management.
• Maintain cleanliness and sanitation standards in all kitchens and back‑of‑house areas.
• Monitor the use and care of cleaning supplies, chemicals, and equipment.

Team Leadership

• Assign tasks and schedules to stewarding staff to ensure smooth operations.
• Provide coaching and guidance to team members to uphold standards.
• Promote teamwork, discipline, and a positive work environment.

Compliance & Safety

• Ensure adherence to HACCP, food safety, and hotel hygiene standards.
• Report and address any maintenance or safety issues promptly.
• Support sustainability initiatives in waste reduction and resource management.

Collaboration

• Work closely with the culinary and food & beverage teams to support operational needs.
• Coordinate with supervisors and managers to ensure seamless service delivery.

Qualifications & Experience

• Minimum of 2–3 years’ experience in stewarding or kitchen operations, with at least 1 year in a supervisory role.
• Strong knowledge of hygiene, sanitation, and food safety standards.
• Experience in luxury hotels or resorts preferred; pre‑opening experience is an advantage.
• Effective leadership, organizational, and communication skills.
• Ability to work in a fast‑paced environment and adapt to pre‑opening requirements.
