Job summary

Mandarin Oriental Desaru Coast is seeking a Chef De Cuisine to lead the Culinary Department with a focus on exceptional quality and service. You will set menus, coordinate with other outlets and ensure training across the team to uphold brand standards.

You will drive HACCP compliance, oversee hygienic operations, mentor staff, and collaborate with hotel departments to deliver memorable dining experiences for guests.

Qualifications

• Minimum 5–8 years of culinary experience in a luxury hotel or upscale restaurant.
• At least 2–3 years in a leadership role as Sous Chef or Chef de Cuisine.
• Pre-opening hotel experience is an added advantage.
• Strong knowledge of international and local cuisine.

Responsibilities

• Design and implement menus that fit outlet requirements.
• Coordinate with other areas for menu implementation or banquets.
• Provide recipes, training and experience to staff to improve performance.
• Maintain HACCP controls and ensure proper food handling and storage.
• Lead daily briefings and ensure high standards of cleanliness and station readiness.
