Job summary

Mandarin Oriental, Desaru Coast is seeking a Pastry Chef to lead the pastry, bakery, dessert, and confectionery productions, ensuring high standards of quality, hygiene, and guest experience while developing the pastry team.

You will oversee daily production, menu development, recipe costing, and creative pastry offerings, while maintaining HACCP compliance and cost controls. Luxury hotel pastry leadership required.

Qualifications

• Diploma in Pastry Arts or equivalent required.
• Experience in luxury hotel pastry operations preferred.
• Supervisory or leadership experience is desirable.

Responsibilities

• Oversee daily pastry, bakery, dessert, and confectionery production.
• Ensure recipes, quality, and presentation meet standards.
• Lead and develop the pastry team in collaboration with senior chefs.
• Manage recipe costing, portion control, and inventory.
• Support events and special occasions with pastry planning.
