Job summary

Villa Maria Polanco is seeking a highly knowledgeable Sommelier for a remote position based in Mexico. The role focuses on curating and managing an extensive wine list, providing expert virtual recommendations to guests, and contributing to staff wine education.

You will elevate the wine program and enhance the dining experience for patrons of a renowned fine-dining establishment, even when not physically present on-site daily.

Qualifications

• Experienced sommelier with deep knowledge of global wine regions and tasting notes.
• Ability to curate and manage a diverse wine list for a fine-dining concept.
• Experience educating staff and conducting wine tastings/training sessions.

Responsibilities

• Develop, curate, and manage an extensive wine list aligned with cuisine and target guests.
• Source wines from distributors, manage inventory, cellar organization, and purchasing.
• Provide expert wine recommendations and pairings during virtual or telephonic consultations.
• Educate front-of-house staff on wine knowledge, service standards, and tasting notes.
• Conduct remote wine tastings and staff education sessions as required.
• Monitor wine trends and opportunities to enhance the wine program.
• Assist in managing wine-related costs and profitability of the beverage program.
• Ensure proper wine storage and serving temperatures.
• Collaborate with Head Chef and management on menu development and wine list updates.
