Job summary

Hyatt Hotels Corporation is opening Park Hyatt Mexico City Polanco and seeks a Sommelier to lead an exceptional wine program for ultra-luxury service. You will be on the floor, providing personalized wine recommendations and sharing stories that elevate the dining experience.

With strong knowledge of international and Mexican wines and experience in luxury hospitality, you will train colleagues, manage inventory, and contribute to profitability through thoughtful wine cost management.

Qualifications

• 3+ years as a Sommelier or wine professional in luxury hospitality or fine dining.
• Strong knowledge of international and Mexican wines and vintages.
• Wine certification such as CMS, WSET, ASI or equivalent desirable.
• Luxury hotel and/or pre-opening experience is highly desirable.
• Experience with premium wines, wine service, and inventory control.
• Excellent guest engagement, storytelling and training skills.
• Understanding of wine cost, pricing, inventory, revenue and profitability.

As Sommelier, you will play an important role in bringing to life an exceptional wine program that reflects the hotel’s ultra-luxury positioning, culinary vision, and commitment to personalized guest experiences. With a strong presence on the floor, you will serve as a trusted wine expert for our guests, providing thoughtful and personalized recommendations based on individual preferences, while creating memorable experiences through engaging storytelling, intuitive service, and exceptional product knowledge.

Qualifications

• Minimum 3 years of relevant experience as a Sommelier or wine professional within luxury hospitality or fine dining environments.
• Strong knowledge of international and Mexican wines, including key regions, producers, grape varieties, vintages, and contemporary wine trends.
• Recognized wine certification such as CMS, WSET, ASI, or equivalent is highly desirable.
• Luxury hotel and/or pre-opening experience is highly desirable.
• Experience with premium wines, wine service, cellar organization, inventory control, and stock management.
• Strong guest engagement, communication, storytelling, and guided-selling skills.
• Passion for sharing wine knowledge and developing colleagues through training and tastings.
• Commercial awareness with an understanding of wine cost, pricing, inventory, revenue generation, and profitability.
