Job summary

Hotel La Palma in Capri is seeking a Sushi Chef to lead the sushi station, ensuring top-tier preparation, presentation, quality, and food safety while guiding the kitchen during service.

The ideal candidate has 4+ years in a luxury sushi setting, deep knowledge of fish handling and HACCP, and experience supervising a team and contributing to menu development. Staff accommodation and meals are provided.

Qualifications

• Solid expertise in sushi and Japanese cuisine (sushi, sashimi, nigiri, maki, uramaki, temaki).
• Strong knowledge of fish handling and HACCP procedures.
• Mise en place management and quality standards.
• Experience supervising junior team members, stock monitoring, and menu development.

Responsibilities

• Oversee the sushi station, ensuring highest standards of preparation, presentation, quality and food safety.
• Lead the team during service and support smooth kitchen operation.

Mission

The Sushi Chef is responsible for overseeing the sushi station, ensuring the highest standards of preparation, presentation, quality, and food safety, while supporting the smooth operation of the kitchen and leading the team during service.

Profile

The ideal candidate has solid expertise in sushi and Japanese cuisine, including sushi, sashimi, nigiri, maki, uramaki, and temaki. They demonstrate excellent knowledge of fish handling, HACCP procedures, mise en place management, and quality standards. The role also includes supervising junior team members, monitoring stock levels, supporting food cost control, and contributing to menu development. A minimum of 4 years of experience in a high-end sushi restaurant or luxury hospitality environment is required.
