Job summary

Sunda, located in Bingin, Bali, is hiring a FOH Manager to lead the front-of-house for our new 100-seat Southeast Asian restaurant. The role spans host, service, and bar, creating a seamless guest experience and a culture of hospitality rooted in Sundaland storytelling.

You will report to the Group Operations Manager and build processes that ensure smooth service, strong KPIs, and proactive guest care during peak dining hours.

Qualifications

• 5+ years FOH management experience.
• Proven track record leading hospitality teams.
• Experience with fine dining or elevated casual service.
• Strong operational and problem-solving skills under pressure.
• Comfort with POS systems and basic financial management.

Responsibilities

• Lead service culture across host, service, and bar teams.
• Oversee opening/closing, staffing, table management and guest flow.
• Ensure smooth service delivery with pacing and accuracy.
• Collaborate with BOH to support food and beverage delivery.
• Oversee bar operations and beverage knowledge.
• Track KPIs, manage POS, and provide weekly updates to the Group Operations Manager.

Role Overview

You manage front-of-house operations at Sunda, our new 100-seat Southeast Asian restaurant launching in Bingin. We are building an experience rooted in Sundaland, a cultural moment when Indonesia, Malaysia, Singapore, Thailand and Vietnam shared more than borders. Your role is to create seamless service that brings that story to life, managing the team across host, service, and bar.

Reporting Structure

Reports to: Group Operations Manager

Key Responsibilities

• Lead service culture. Hire, train, and develop FOH team (host, server, bartender). Set standards for hospitality and attention to detail. Model the care we bring to our work.
• Manage daily operations. Oversee opening and closing, staffing schedules, table management, and guest flow. Handle operational issues and guest concerns in the moment.
• Service delivery. Ensure service runs smoothly: pacing, accuracy, attention. Build systems that work across a busy dinner service.
• Collaboration with kitchen. Work closely with BOH to support food and beverage delivery. Communicate kitchen needs to service team.
• Bar and beverage. Oversee bar operations, cocktail service, and wine/spirits knowledge across the team.
• Reporting and systems. Track KPIs, manage POS, reconcile service charge and cash. Provide weekly operational updates to Group Operations Manager.
