Job summary

Village Hotels is seeking a Sous Chef and Kitchen Team Leader to fuse the Head Chef's vision with a busy service. You’ll own your section, support the brigade, and ensure every plate leaving the pass meets our standards for quality, temperature, and presentation.

You’ll drive food safety, HACCP and brand delivery while mentoring junior kitchen staff and KPs, managing stock, wastage, and monthly paperwork with accuracy. This role rewards energy, ownership, and teamwork.

Responsibilities

• The Kitchen Floor: hands-on Sous Chef, run your section, control flow, monitor portions, assist others when tickets pile up.
• The Standards: ensure food safety and brand delivery, temperature checks, fresh specifications, HACCP and EHO compliance.
• The Brigade: supervise and coach junior kitchen staff and KPs, translate strategy into action, keep the team safe around equipment, foster menu passion.
• The Commercial Reality: protect gross profit, manage stock to par levels, minimise waste, keep monthly stock paperwork up to date.
