Responsibilities

  • Assist in the day-to-day running of culinary operations regarding menus, recipes, staffing, and cleanliness.
  • Ensure proper staffing for maximum productivity and quality.
  • Assist the Executive Chef in evaluating food product quality.
  • Provide training and development opportunities for kitchen staff.
  • Implement changes based on evaluations for continuous improvements.

Skills

AAA level 3 or equivalent
Full understanding of menu costing and menu planning
Full understanding of HACCP
12 years minimum at a 4 / 5 star Hotel and / or large reputable restaurant with at least 1 AA Rosette
Experience leading a team of 10+ kitchen staff
Food hygiene level 3, Craft Trainer or Train the Trainer

HOURS – 48 hours per week, 5 days out of 7

OUR IDEAL HERO WILL HAVE


  • AAA level 3 or equivalent

  • A full understanding of menu costing and menu planning

  • A full understanding of HACCP

  • 12 years minimum at a 4 / 5 star Hotel and / or large reputable restaurant with at least 1 AA Rosette

  • Experience leading a team of 10+ kitchen staff

  • Food hygiene level 3, Craft Trainer or Train the Trainer

  • Assist in the day-to-day running of the culinary operations in terms of menus, recipes, staffing, food cost, cleanliness, and HACCP

  • Ensure proper staffing for maximum productivity and high standards of quality; controls food and payroll costs to achieve maximum profitability

  • Assist the Executive Chef in evaluating food products to assure that quality standards are consistently attained

  • Provide training and professional development opportunities for all kitchen staff

  • Be responsible for taking the results of evaluations and implementing changes to ensure continuous innovations and improvements are made within the department
