Job summary

Big Mamma in Berlin is seeking a Chef de Partie (M/F) to manage stock, oversee mise en place, and ensure high food safety standards while coordinating passes during service.

You will train junior team members, work under the group's culinary direction focusing on fresh pasta, and contribute to achieving cost controls and consistency across dishes.

• Demonstrate solid knowledge of culinary fundamentals and techniques.

• Have a basic understanding of the group's artistic direction and standards.
• Ensure quality control and oversee mise en place, with strong knowledge of hygiene and food safety regulations.
• Manage the pass and coordinate service operations.
• Demonstrate solid knowledge of culinary fundamentals and techniques, accurately reproduce recipes, and possess expertise in fresh pasta preparation.
• Train and mentor junior team members, support onboarding processes, and foster team motivation and engagement.
