Job summary

Big Mamma in Berlin is seeking a Chef de Partie to join the kitchen team. You will manage stock and inventory, ensure quality across mise en place, and assist in maintaining hygiene standards.

You will oversee the pass, coordinate service, and reproduce classic Italian recipes with fresh pasta expertise. As a Chef de Partie, you will train junior staff, support onboarding, and help motivate the team to deliver exceptional dining experiences.

Responsibilities

• Manage stock, inventory, and understand food cost control.
• Have a basic understanding of the group's artistic direction and standards.
• Ensure quality control and oversee mise en place, with strong knowledge of hygiene and food safety regulations.
• Manage the pass and coordinate service operations.
• Demonstrate solid knowledge of culinary fundamentals and techniques, accurately reproduce recipes, and possess expertise in fresh pasta preparation.
• Train and mentor junior team members, support onboarding processes, and foster team motivation and engagement.
