This full-time role reports to the Production Supervisor and involves maintaining consistency of our sourdough and seasonal offerings, meeting deadlines, and contributing creatively to both product and process.
You will lead dough prep, shape loaves, manage ovens, supervise juniors, ensure WHS and cleanliness, and thrive in a fast-paced bakery culture
Sprout Artisan Bakery has earned a loyal following across Brisbane for handcrafted bread and pastries. Based at our production home at Craft'd Grounds in Albion, we're a wholesale and retail bakery with a close-knit team who genuinely enjoy working together. Our bread production crew has more than 25 years of combined experience.
About the role
We're looking for a full-time Senior Sourdough Baker. You'll report to our Production Supervisor and be a key contributor to the daily running of our bread production. It's a fast-paced, hands-on job with real deadlines, so you'll need to be organised and calm when the ovens are full. You'll keep our much-loved product lines consistent and beautiful, and when the seasons turn or new ingredients come into play, we want you to help shape what comes next. This is a creative challenge as much as a production role.
Key responsibilities
Weighing, mixing and making doughs to our recipes and methods
Hand-shaping sourdough loaves, baguettes and rolls
Running our convection and deck ovens
Producing high volumes without compromising on quality or presentation
Keeping an eye on inventory, cleanliness and hygiene
Guiding, training and delegating to junior teammates, and pitching in wherever needed
About you
At least 3 years' experience as a baker, in a similar role or a high-volume kitchen
Hands-on sourdough experience
A baking qualification, trade certificate or solid length of tenure
A real passion for quality and consistency, and a thirst to keep learning
Strong people and communication skills, and the confidence to take direction and delegate
Attention to detail and a high commitment to WH&S, including spotting and minimising hazards
A can-do attitude and a level head under time pressure
Flexibility for midnight starts, weekends and public holidays, as the roster requires
Unrestricted right to work in Australia
A respected Brisbane name, with a team that's been doing this for over a decade
Room to be creative with seasonal and ingredient-led ideas
A supportive, team-first workplace with supervisors who understand that family come first and a work/life balance is important
