Job summary

The Hampden Hotel in Nedlands is seeking an experienced Chef De Partie to support the Head Chef in a high-volume kitchen. This full-time role focuses on consistent preparation, presentation and operation standards across a busy dining and events program.

Ideal candidates have strong leadership capabilities, advanced knife skills and a solid foundation in classical and contemporary techniques, plus a clear understanding of food safety and cost controls.

Qualifications

• Minimum 5 years' professional cooking experience, with at least 2 years in supervisory or senior chef de partie role.
• Diploma or Certificate IV in Commercial Cookery or equivalent training preferred.
• Advanced knife skills and knowledge of classical and contemporary cooking techniques.
• Strong understanding of food safety, hygiene standards and HACCP principles.
• Proven leadership and mentoring abilities to motivate kitchen staff.

Responsibilities

• Assisting the Head Chef in menu planning, recipe development and seasonal changes.
• Overseeing daily food preparation and ensuring dishes meet quality and presentation standards.
• Maintaining strict adherence to food safety, hygiene and health regulations.
• Controlling food costs through inventory management, portion control and waste minimisation.
• Monitoring stock levels and liaising with suppliers for quality ingredients.
• Stepping in as kitchen leader during Head Chef's absence to maintain service standards.
• Maintaining proper use of kitchen equipment and facilities.
• Collaborating with front-of-house staff to ensure seamless service and guest satisfaction.
