Job summary

Sofitel Sydney Darling Harbour is seeking a Commis Chef to join our Culinary team. You will support preparation, cooking and presentation of dishes across multiple outlets, ensuring quality and consistency while maintaining a clean, organised workstation.

You’ll learn from experienced chefs, rotate across Atelier, Club Millésime, Le Rivage, Breakfast, In-Room Dining, Esprit Noir and Champagne Bar, and develop your skills in a luxury hotel kitchen.

Qualifications

• Certificate in Commercial Cookery or equivalent.
• Experience in a commercial, hotel or restaurant kitchen.
• Strong passion for food and developing culinary skills.
• Understanding of food preparation, cooking and kitchen operations.

Responsibilities

• Assist with the preparation, cooking and presentation of dishes across our Culinary outlets.
• Complete daily mise en place and support your section during service.
• Follow recipes, portion sizes and presentation standards.
• Maintain a clean, organised and service-ready workstation.
• Assist Chefs and Sous Chefs with daily kitchen operations.
• Maintain high standards of food quality, freshness and presentation.
• Follow food safety, hygiene and HACCP procedures at all times.
• Support effective stock rotation, storage and waste minimisation.
• Work efficiently during busy and high-volume service periods.
• Communicate positively and effectively with the wider Culinary team.
• Assist with receiving and storing food deliveries as required.
• Follow all workplace health and safety procedures.
• Take every opportunity to learn new techniques and develop your culinary skills.
• Contribute to a positive, collaborative and professional kitchen environment.
