Job summary

Delano Dubai on Bluewaters Island seeks a passionate Junior Sous Chef – Banquets to join our culinary team. You will support the planning, preparation and delivery of food for banquets, meetings, weddings and events, ensuring every dish reflects Delano’s commitment to quality.

You will guide junior chefs, coordinate mise en place, and collaborate with Banqueting Service to meet guest requests, while upholding food safety and cost targets in a luxury hotel environment.

Qualifications

• Previous Junior Sous Chef or Chef de Partie aiming for the next step in luxury hotel banquet operations.
• Strong culinary skills and ability to deliver high quality food for high-volume events.
• Understanding banquet production, buffet service, plated dining and live cooking stations.
• Sound knowledge of food safety, HACCP principles and allergen management.

Responsibilities

• Support the planning, preparation and delivery of food for banquets, meetings, weddings and special events.
• Review banquet event orders and coordinate mise en place, production schedules and service requirements.
• Supervise assigned kitchen sections, ensuring consistent flavour, presentation, portioning and timely service.
• Lead kitchen operations in the absence of the Sous Chef, as required.
• Work closely with the Banqueting Service team to coordinate event timings and guest requests.
• Support menu development, tastings and creative food presentations for different event styles.
• Guide and coach junior chefs, building skills and fostering a supportive team environment.
• Assist with stock control, ordering and food storage, maintaining quality and minimising waste.
• Monitor food safety, hygiene and kitchen cleanliness in line with hotel procedures and local requirements.
