Job summary

DELANO Dubai is seeking a passionate Junior Sous Chef – Banquets to join our culinary team. You will support the planning, preparation and delivery of food for banquets, events and high-end gatherings, ensuring top-quality execution and guest satisfaction.

Working closely with banquet leadership, you will mentor junior chefs, oversee kitchen stations, manage mise en place and maintain stringent food safety standards for diverse events at our luxury property on Bluewaters Island in Dubai.

Qualifications

• Previous experience as a Junior Sous Chef or Chef de Partie ready for the next step.
• Strong culinary skills and ability to deliver consistent food quality across high-volume events.
• Banqueting production, buffet service, plated dining & live cooking stations knowledge.
• Organisation and adaptability to prioritise prep, coordinate workloads and stay calm when event requirements change.
• Team-oriented with ability to guide, support and develop junior chefs.
• Knowledge of food safety, HACCP principles and allergen management.

Responsibilities

• Review banquet event orders and coordinate mise en place, production schedules and service requirements.
• Supervise assigned kitchen sections, ensuring flavour, presentation, portioning and timely service.
• Lead kitchen operations in the absence of the Sous Chef as required.
• Work with the Banqueting Service team to coordinate event timings and guest requests.
• Assist with menu development, tastings and creative presentations for different event styles.
• Ensure dietary requirements and allergies are clearly communicated and handled appropriately.
• Guide and coach junior chefs, fostering a supportive team environment.
• Assist with stock control, ordering and food storage to maintain quality and minimise waste.
• Monitor food safety, hygiene, temperature controls and kitchen cleanliness.

The Opportunity

We’re looking for a passionate & organised Junior Sous Chef – Banquets to join our culinary team at Delano Dubai.

From intimate celebrations to large events, you’ll help create memorable dining experiences through thoughtful preparation, confident execution & attention to detail. Working closely with the banquet culinary leadership, you’ll support daily operations, guide the team & ensure every dish reflects Delano’s commitment to quality.

What You’ll Be Doing

• Support the planning, preparation & delivery of food for banquets, meetings, weddings & special events.
• Review banquet event orders & coordinate mise en place, production schedules & service requirements.
• Supervise assigned kitchen sections, ensuring consistent flavour, presentation, portioning & timely service.
• Lead kitchen operations in the absence of the Sous Chef, as required.

• Assist with stock control, ordering & food storage, maintaining quality while minimising waste.
• Monitor food safety, hygiene, temperature controls & kitchen cleanliness in line with hotel procedures & local requirements.
• Support effective use of ingredients, equipment & team resources to meet operational needs & food cost targets.

Qualifications

What We’re Looking For

• Relevant Experience: Previous experience as a Junior Sous Chef or an experienced Chef de Partie ready for the next step, ideally within luxury hotel banquet operations.
• Culinary Expertise: Strong culinary skills & the ability to deliver consistent food quality across high-volume events.
• Banqueting Knowledge: A good understanding of banquet production, buffet service, plated dining & live cooking stations.
• Organisation & Adaptability: The ability to prioritise preparation, coordinate workloads & remain calm when event requirements change.
• Team Spirit: A collaborative approach & confidence in guiding, supporting & developing junior chefs.
• Food Safety: Sound knowledge of food safety, HACCP principles & allergen management.
• Communication: Clear communication skills & a focus on creating exceptional guest experiences.
• Qualifications: A culinary qualification is an advantage.
