Job summary

Delano Dubai, located on Bluewaters Island, seeks a Chef de Partie – Banquets to join our culinary team. You will manage your section, prepare for plated events, buffets and live cooking stations, and collaborate with the banquet team to deliver memorable dining experiences.

Ideal candidates bring strong banqueting knowledge, high-volume service experience, and a passion for food safety. Flexibility to work evenings, weekends and holidays is required for event schedules.

Qualifications

• Previous experience as a Chef de Partie or Demi Chef de Partie ready for step-up, ideally in luxury hotel banquet operations.
• Strong cooking skills with attention to detail to maintain quality during high-volume service.
• Experience with banquet prep, buffet service, plated dining & live cooking stations.
• Ability to manage your section, prioritise prep and stay calm with changing event requirements.
• Knowledge of HACCP principles and allergen management.
• Clear communication and a passion for delivering exceptional guest experiences.

Responsibilities

• Manage your assigned section, ensuring dishes are prepared and presented to Delano’s standards.
• Organise mise en place according to banquet orders, menus and production schedules.
• Prepare dishes for plated events, buffets, receptions and live stations.
• Coordinate with Sous Chef to ensure smooth preparation and timely service.
• Maintain flavour, presentation, portion sizes and food quality across events.
• Follow recipes and support menu tastings and presentation improvements.
• Handle dietary requirements and allergens per procedures.
• Guide Demi Chefs de Partie and Commis Chefs, supporting their development.
• Monitor stock levels and manage ordering and rotation.
• Minimise food waste and use ingredients responsibly.
• Maintain food safety, hygiene and temperature records.
