Delano Dubai is seeking a Chef de Partie – Banquets to join our culinary team on Bluewaters Island. You will take ownership of your section, delivering high-quality plates for intimate events and large banquets with care, precision, and creativity.

You will lead and guide Demi Chefs de Partie and Commis Chefs, ensuring consistency, safety, and flawless execution across meals, buffets, and live cooking stations in a vibrant luxury setting.

Job Description

The Opportunity

We’re looking for a passionate & skilled Chef de Partie – Banquets to join our culinary team at Delano Dubai.

From intimate celebrations to large events, you’ll bring care, creativity & precision to every plate. Working closely with the banquet culinary team, you’ll take ownership of your section & help deliver memorable dining experiences.

What You’ll Be Doing

• Manage your assigned section, ensuring food is prepared & presented consistently to Delano’s standards.
• Organise mise en place according to banquet event orders, menus & production schedules.
• Prepare dishes for plated events, buffets, receptions & live cooking stations.
• Coordinate with the Sous Chef & Junior Sous Chef to ensure smooth preparation & timely service.
• Maintain consistent flavour, presentation, portion sizes & food quality throughout each event.
• Follow recipes & support menu tastings, sharing ideas for dishes & presentation.
• Handle dietary requirements & allergens carefully, following established procedures.
• Guide Demi Chefs de Partie & Commis Chefs, supporting their development & daily work.
• Monitor stock levels, communicate ordering requirements & follow correct storage and stock rotation procedures.
• Minimise food waste & use ingredients responsibly.
• Maintain food safety, hygiene, temperature records & cleanliness in line with hotel procedures & local requirements.
• Keep equipment in good working order & report maintenance needs promptly.

Qualifications

What We’re Looking For

• Relevant Experience: Previous experience as a Chef de Partie or an experienced Demi Chef de Partie ready for the next step, ideally within luxury hotel banquet operations.
• Culinary Expertise: Strong cooking skills & attention to detail, with the ability to maintain quality during high-volume service.
• Banqueting Knowledge: Experience with banquet preparation, buffet service, plated dining & live cooking stations.
• Organisation & Adaptability: The ability to manage your section, prioritise preparation & respond calmly to changing event requirements.
• Team Spirit: A collaborative approach & willingness to guide and support junior chefs.
• Food Safety: Sound knowledge of food safety, HACCP principles & allergen management.
• Communication: Clear communication skills & a focus on delivering exceptional guest experiences.
• Qualifications: A culinary qualification is an advantage.
• Flexibility: Availability to work varied shifts, including evenings, weekends & public holidays, according to event schedules.
