Hudson House, a Vandelay Companies restaurant, is seeking a skilled Sushi Cook to deliver refined, high-quality sushi with precision and creativity. The role emphasizes craftsmanship, presentation, and hospitality in a fast-paced environment.

You will work closely with the kitchen team, maintain station readiness, and participate in training to grow technical skills and culinary knowledge within Vandelay’s program.

Qualifications

• Experience in a high-volume upscale dining environment is required.
• Deep knowledge of sushi preparation and traditional techniques.
• Strong knife skills and precise fish fabrication.
• Attention to detail in cleanliness, organization, and presentation.

Responsabilités

• Prepare a full range of sushi offerings (sashimi, nigiri, maki) with precision and consistency.
• Fabricate and portion fish accurately, ensuring freshness and proper handling.
• Ensure all sushi is crafted with high-quality ingredients and presented with care.
• Maintain a clean, organized, and stocked sushi station during prep and service.
• Follow all food safety, health, and sanitation guidelines at all times.
• Monitor product levels, assist with inventory, and communicate orders as needed.
• Collaborate with kitchen team and leadership for smooth service flow.
• Contribute to development of new menu items and seasonal offerings.
• Engage with guests with warm hospitality and product knowledge.
