Qualifications

• 2+ years of professional sushi experience in a high-volume, upscale dining environment.
• Strong knife skills with the ability to fabricate fish, portion accurately, and work with speed.
• High attention to detail with a commitment to cleanliness, organization, and presentation.
• Excellent communication and interpersonal skills for guest and team interactions.
• Team-oriented mindset and ability to collaborate in a fast-paced kitchen.
• Flexibility to work varied shifts including evenings, weekends, and holidays.
• Food handler certification as required by state and local agencies.

Responsibilities

• Prepare a full range of sushi offerings (sashimi, nigiri, maki) with precision and consistency.
• Fabricate and portion fish accurately, ensuring freshness and proper handling.
• Craft sushi dishes using high-quality ingredients and attention to detail.
• Maintain a clean, stocked sushi station throughout prep and service.
• Adhere to all food safety, health, and sanitation guidelines.
• Monitor product levels and assist with inventory management and ordering.
• Collaborate with the kitchen team and leadership to ensure smooth service.
• Contribute to creating and refining new menu items and specials.
• Engage with guests when appropriate to share knowledge and hospitality.
• Support opening, mid-shift, and closing duties to keep station ready.
• Attend training opportunities to grow technically and professionally.
