You will prepare sashimi, nigiri, and maki with precision, maintain station cleanliness, manage fish fabrication and portioning, and collaborate with the kitchen team to uphold exceptional hospitality and guest satisfaction.

Qualifications

• 2+ years of professional sushi experience in a high-volume, upscale dining environment.
• Extensive knowledge of sushi preparation, traditional techniques, product quality, and proper ingredient handling.
• Strong knife skills with the ability to fabricate fish, portion accurately, and work with precision and speed.
• Excellent communication and interpersonal skills, with the ability to engage warmly with guests and team members.

Responsibilities

• Prepare a full range of sushi offerings (including sashimi, nigiri, and maki rolls) with precision and adherence to standards.
• Fabricate and portion fish accurately, ensuring premium quality and proper handling.
• Maintain a clean, organized, and fully stocked sushi station during prep and service.
• Adhere to all food safety, health, and sanitation guidelines.
• Monitor product levels, assist with inventory management, and communicate ordering needs.
