Hudson House Las Colinas, an upscale neighborhood restaurant from Vandelay Companies, seeks a skilled Sushi Chef to elevate our refined sushi program. You will craft sashimi, nigiri, and maki with precision, creativity, and presentation that meet Vandelay’s standards while delivering welcoming hospitality.

Responsibilities include maintaining a pristine sushi station, collaborating with the kitchen team, and contributing to seasonal menus.

Qualifications

• Must be at least 18 years old.
• Minimum 2+ years of sushi experience in upscale dining.
• Extensive knowledge of sushi prep, traditional techniques, product quality and handling.
• Strong knife skills and ability to fabricate fish with precision.
• High attention to detail with cleanliness, organization and presentation.
• Positive attitude, responsibility and professionalism.
• Excellent communication and interpersonal skills.
• Team-oriented in a fast-paced kitchen.
• Ability to work evenings, weekends and holidays.
• State/local food handler certification.
• Desire to grow technically within Vandelay’s culinary program.

Responsibilities

• Prepare sushi offerings (sashimi, nigiri, maki) with precision and consistency.
• Fabricate and portion fish accurately, ensuring freshness.
• Ensure high-quality ingredients and presentation of dishes.
• Maintain a clean, stocked sushi station throughout prep and service.
• Adhere to all food safety and sanitation guidelines.
• Monitor stock levels and assist with inventory needs.
• Collaborate with kitchen leadership for smooth service.
• Contribute to new menu items and seasonal specials.
• Engage with guests with warm hospitality and product knowledge.
• Support opening, mid-shift, and closing duties at the station.
• Attend trainings to develop technical skills and culinary knowledge.
