Job summary

Hudson House in Fort Worth, TX, is seeking a Sushi Cook to deliver refined, high-quality sushi in a fast-paced, upscale setting. You will prepare sashimi, nigiri, and maki with precision, creativity, and consistency, upholding Vandelay’s standards for craftsmanship and presentation.

You’ll fabricate and portion fish, maintain a pristine sushi station, follow safety guidelines, and collaborate with the kitchen team to ensure a seamless flow of service.

Qualifications

• Minimum of 2+ years of professional sushi experience in a high-volume, upscale dining environment.
• Extensive knowledge of sushi preparation, traditional techniques, product quality, and proper ingredient handling.
• Strong knife skills with the ability to fabricate fish, portion accurately, and work with speed.
• High attention to detail with a commitment to cleanliness, organization, and presentation.
• Positive attitude with responsibility, ownership, and professionalism.
• Excellent communication and interpersonal skills for guest and team interactions.
• Flexibility to work evenings, weekends, and holidays.
• Food handler certification as required by state/local agencies.
• Desire to continue growing technically within Vandelay’s culinary program.

Responsibilities

• Prepare a full range of sushi offerings (sashimi, nigiri, maki) with precision and consistency.
• Fabricate and portion fish accurately, ensuring premium quality and proper handling.
• Craft sushi dishes using high-quality ingredients with attention to presentation.
• Maintain a clean, organized, and fully stocked sushi station during prep and service.
• Adhere to all food safety, health, and sanitation guidelines.
• Monitor product levels, assist with inventory and ordering needs.
• Collaborate with kitchen team and leadership to ensure smooth service flow.
• Contribute to creation and refinement of new menu items and specials.
• Engage with guests, sharing product knowledge with warmth and clarity.
• Support opening, mid-shift, and closing duties to keep station ready.
• Attend training to grow technical culinary skills.
