Qualifications

• 2+ years of professional sushi experience in a high-volume, upscale dining environment
• Extensive knowledge of sushi preparation, traditional techniques, product quality, and proper ingredient handling
• Strong knife skills with precision in fish fabrication and portioning
• High attention to detail and commitment to cleanliness, organization, and presentation

Responsibilities

• Prepare a full range of sushi offerings (sashimi, nigiri, maki) with precision and consistency
• Fabricate and portion fish accurately, ensuring freshness and proper handling
• Maintain a clean, organized, and fully stocked sushi station during prep and service
• Adhere to food safety, health, and sanitation guidelines
• Collaborate with kitchen leadership to ensure smooth service and pacing
• Assist with inventory management and ordering needs
