Job summary

Viceroy Hotels in Sun Valley seeks a seasoned Sous Chef to lead the kitchen team, ensuring high-quality prep, consistent presentation, and strict cost control. You will train staff, uphold safety standards, and collaborate with F&B leadership to optimize productivity and guest satisfaction.

The role supports the opening of Sun Valley's luxury property and contributes to delivery of exceptional, experiential dining experiences for a year-round mountain destination.

Qualifications

• At least 4 years of related progressive experience; or a culinary graduate with at least 2 years of progressive experience in a hotel or related field.
• Knowledge of F&B preparation techniques, health department rules and regulations, and liquor laws and regulations.
• May be required to work long hours.
• Must be able to multitask and prioritize departmental functions to meet deadlines.

Responsibilities

• Oversee daily kitchen operations and food production areas, ensuring quality and consistency.
• Assess portion size, visual appeal, temperature, and taste of items served.
• Coordinate with Executive leadership on labor control and food cost management.
• Train staff and ensure adherence to SOPs and safety standards.
• Work with F&B managers to communicate issues and improve operations.
