Job summary

Viceroy Hotels is launching a Sun Valley resort and seeks a Sous Chef to lead kitchen operations, ensuring high-quality, timely meals and adherence to standards. You will train staff, manage food cost, inventory, and sanitation, while coordinating with F&B leadership.

Ideal candidates bring 4+ years in culinary roles (or a culinary degree with 2+ years) and a solid grasp of health and safety regulations. This full-time position offers benefits and a dynamic luxury-hospitality environment.

Qualifications

• Must have knowledge of F&B preparation techniques, health department rules and regulations, and liquor laws and regulations.
• May be required to work long hours.
• Medium work – exerting up to 50 pounds of force occasionally, and/or 20 pounds frequently.
• Strong communication with all levels of staff and guests.

Responsibilities

• Work with other F&B managers and keep them informed of F&B issues as they arise.
• Coordinate and monitor all phases of Loss Prevention in kitchen areas.
• Prepare and submit required reports in a timely manner.
• Monitor quality of all food products and presentation.
• Ensure preparation of required reports, including payroll, employee schedules, and action plans.
• Oversee daily operation of kitchen and food production areas; hot food, bakery support, and cold food as needed.
• Make cooks aware of daily forecasts and counts to serve hot and cold items on time.
• Respond to guest complaints promptly.
• Ensure compliance with SOPs and requisition procedures.
• Report staff performance to Executive leadership and participate in reviews.
• Understand and monitor corporate promotions in outlets.
