Job summary

Viceroy Hotels in Sun Valley, Idaho, is seeking a Sous Chef to ensure meals from the kitchen meet quality, taste, and presentation standards. You will train staff, enforce food specifications and sanitation, and support leadership in controlling labor and food costs while upholding Viceroy standards.

The role requires leadership in daily kitchen operations, knowledge of health and liquor regulations, and the ability to work long hours in a luxury hospitality environment near the winter resort

Qualifications

• At least 4 years of related progressive experience; or a culinary graduate with at least 2 years of progressive experience in a hotel or related field.

Responsibilities

• Coordinate and monitor all phases of kitchen operations and food production.
• Ensure quality and consistency of prepared dishes and presentations.
• Train staff and uphold corporate quality standards; enforce food specifications, portion control, recipes and sanitation.
• Support Executive leadership in controlling labor and food cost including inventory and wastage control.
