Job summary

Bally's Black Hawk Casino in Colorado is seeking an experienced Food & Beverage Director to oversee daily operations across restaurants, bars, kitchens, and events, ensuring consistent standards and guest satisfaction.

You will lead budgets and P&L, staffing plans, menu development, cost controls, and compliance with safety and gaming regulations, partnering with culinary, marketing, finance and property leadership.

Qualifications

• Bachelor's degree preferred; equivalent relevant experience considered.
• 5+ years of progressive food & beverage leadership, including management of multiple outlets; casino/hospitality exp. preferred.
• Budgets, P&L accountability, labor planning, food & beverage cost controls, and guest service standards.
• Knowledge of food safety, sanitation, and responsible alcohol service; certifications and gaming credentials may be required.
• Strong written and verbal communication; ability to work with diverse teams.

Responsibilities

• Direct the daily operations of all assigned food and beverage outlets, including restaurants, bars, kitchens, and events; maintain consistent standards.
• Establish and monitor service, cleanliness, presentation, recipes, portions, and product quality; visit outlets and address guest concerns.
• Lead annual operating plans, budgets, forecasts, and outlet-level P&L reviews; monitor costs and revenue.
• Develop staffing plans and schedules based on volume, events, and budget; ensure coverage across shifts.
• Oversee menu and beverage program development, pricing, promotions, and product mix with culinary leadership and property teams.
• Direct inventory controls, ordering, receiving, storage, vendor relations; investigate variances and protect assets.
• Recruit, train, coach, and develop managers; set expectations and succession plans; ensure accountability.
• Coordinate with HR on employee relations, investigations, attendance, discipline, and policy enforcement.
• Ensure compliance with food safety, sanitation, responsible alcohol service, safety, gaming controls, and licensing; address deficiencies.
• Collaborate with departments (Casino Ops, Marketing, Security, Finance) to support guest service, VIPs, and events.
• Oversee equipment readiness, preventive maintenance, and safety in all F&B areas.
• Prepare operating reports and communicate performance, feedback, staffing, and improvement plans to leadership.
