Job summary

NANA Regional Corporation in Alaska seeks a Remote Cook to manage daily preparation, production, stock, and presentation of a wide variety of foods in a remote camp kitchen. You will support breakfast, lunch and dinner service while maintaining sanitation and food safety standards.

You will work with supervisors, supervise staff of 30+ and train teammates, ensuring quantities are correct for serving lines. The role requires long hours standing and travel to remote camps.

Qualifications

• High school diploma or GED required.
• Five (5) years of directly related restaurant cooking experience with high-volume production.
• Ability to instruct and train others and handle multiple tasks simultaneously.
• Alaska Food Workers Card and/or ServSafe Certification upon hire.

Responsibilities

• Performs main line food production duties as assigned.
• Reviews daily needs with supervisors and manages production sheets.
• Assists with menu and recipe development.
• Monitors and replenishes salad bar and pantry items using rotation procedures.
• Cooks breakfast, lunch and dinner items and related dishes.
• Prepares and restocks bulk/fresh vegetables, salads, meats, cheeses and dressings.
• Uses production sheets to determine amounts for serving areas.
• Maintains sanitation and cleanliness of preparation areas and equipment.
• Supervises staff and trains food service personnel.
• Ensures proper rotation and maintains safety standards.
