Job summary

NMS is seeking a Remote Cook for a remote Alaska camp. You will handle daily food production, stocking, and presentation for breakfast, lunch, and dinner, while maintaining sanitation and safety across all preparation areas.

You will oversee a large kitchen staff, participate in menu development, and ensure consistent quality and proper rotation of ingredients in a challenging remote environment.

Qualifications

• Minimum five years of directly related restaurant cooking experience with high-volume production.
• Ability to train and supervise staff.
• Alaska Food Workers Card and/or ServSafe Certification required on hire.
• Must pass pre-employment background check and UA drug test.
• Must be able to work 12-hour shifts and live in remote dormitory settings.
• Must speak, read, write and understand English.

Responsibilities

• Perform main line food production duties as assigned per shift.
• Review daily needs with supervisors; complete production sheets and verify supplies.
• Assist supervisors with menu and recipe development.
• Monitor and replenish salad bar and pantry items; rotate stock.
• Cook breakfast, lunch, dinner items and related foods; prepare salads and dressings.
• Prepare and present items; use production sheets to determine quantities.
• Ensure sanitation and safety; clean and maintain equipment and areas.
• Supervise staff directly or through lead personnel; ensure cost-effective operations.
• Communicate supply needs and back-up items with supervisors.
• Attend to serving lines; ensure items are stocked and displayed properly.
• Ensure compliance with safety and sanitation standards.
