Job summary

Highgate Hotels in Honolulu, Hawaii is seeking a Prep Cook to prepare all food items for Restaurants, Room Service, Employee Cafeteria and Banquets, following standardized recipes while maintaining the highest standards of quality, sanitation and safety.

You will assist in station prep, keep storage areas organized, support other kitchen positions as needed, and ensure timely service while minimizing waste and adhering to health department regulations.

Qualifications

• High School diploma or equivalent; hotel/restaurant experience preferred.
• Culinary experience required.
• Flexibility with long hours; ability to stand for long periods.
• Moderate to heavy lifting up to 50 lbs occasionally.
• Knowledge of menus and hotel standards.
• Proficiency in cooking techniques: charbroiling, poaching, deep-frying, sauté, braising, roasting, and par-cooking.
• Familiar with herbs and spices and proper use of each.

Responsibilities

• Maintain cleanliness and organization of storage areas.
• Prepare and station prep before opening to ensure prompt service.
• Prepare and display buffet items per hotel standards.
• Recognize quality standards in produce, fish, dairy and meat.
• Maintain sanitary kitchen and minimize waste.
• Prepare food for Banquets per Event Orders.
• Prepare food for Employee Cafeteria as directed by the Chef.
• Follow health department regulations and company policies.
• Operate and maintain kitchen equipment; keep clean as you go.
• Support any kitchen position as needed.
