THE ONE GROUP in Baltimore is seeking a Prep Cook to join our kitchen team. You will prep ingredients, support the culinary team, and maintain high food safety standards to ensure a seamless service for our signature menu.

Ideal candidates will have experience in a high-volume kitchen, strong knife skills, and the ability to multi-task in a fast-paced environment. Evening, weekend, and holiday availability is required.

Qualifications

• Previous experience as Prep Cook, Kitchen Assistant, or similar role in a high-volume kitchen preferred.
• Strong knife skills and understanding of basic culinary techniques.
• Ability to multi-task and work efficiently in a fast-paced environment.
• Strong attention to detail and commitment to food quality and safety.
• Willingness to support the BOH team and contribute to overall kitchen success.

Responsibilities

• Prepare and portion ingredients, proteins, sauces, and garnishes according to recipes and specifications.
• Wash, peel, chop, and cut vegetables, fruits, and herbs for use in various dishes.
• Assist with butchering meat, filleting fish, and handling proteins as needed.
• Maintain proper storage, labeling, and rotation of all food products to prevent waste.
• Ensure the prep station is fully stocked, clean, and always organized.
• Work closely with chefs and line cooks to ensure smooth kitchen flow.
• Follow recipe guidelines and portion controls to maintain consistency and quality.
• Assist in the daily mise en place, ensuring all necessary prep is completed before service.
• Maintain cleanliness and sanitation standards, following all health department regulations.
• Execute tasks assigned by Chefs and Kitchen Leadership with professionalism and enthusiasm.
