• Hands-on experience in pitmaster or meat-cutting roles.
• Disciplined, consistent, and craft-focused approach.
• Experience in a fast-paced kitchen environment preferred.

Responsibilities

• Own the pit and meat operation: run the smokers with skill and consistency.
• Cut and portion to spec, monitor quality of every pound of smoked meat.
• Manage inventory and food waste in the pit and meat area.
• Follow process and sanitation procedures; uphold safety standards.
