Job summary

Big Night Entertainment Group is seeking a Sushi Cook to join our kitchen team in a fast-paced setting. You will handle rice preparation, sushi rolling, fish cutting, and accurate portioning for dine-in and take-out plates, while maintaining high standards of cleanliness and food safety.

The role requires at least 1 year of direct sushi experience; Asian cuisine experience is a plus, with flexibility for evenings and weekends.

Qualifications

• At least 1 year direct sushi experience in a fast-paced, upscale bar/restaurant.
• Experience with additional types of Asian cuisine is a plus.
• Food Safety Certification is a plus.

Responsibilities

• Create high quality sushi including cooking rice, rolling sushi, temperature recording, cutting and packaging for take-out and dine-in.
• Prepare sushi dishes according to established guidelines on quality, portion size, presentation, and food safety.
• Expertly cut, slice, and fillet different types of fish.
• Restock all items as needed throughout the shift.

Description

As a Sushi Cook, a typical day might include the following:

• C reating high quality sushi including cooking rice, rolling sushi, temperature recording, cutting and packaging for take-out and dine-in plate preparation
• Preparing sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
• Expertly cutting, slicing, and filleting different types of fish
• Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Sushi Chef when quality is sub-standard
• Setting up, maintaining, and cleaning stations in practicing good safety, sanitation and organizational skills while adhering to restaurant guidelines
• Ensuring quality and safety of food by performing standard and any additional sanitary measures including good personal hygiene, cleaning of surfaces and sweeping of floors, as well as proper covering and storage of food items according to standards and procedures
• Observing safety and security procedures, determining appropriate action beyond guidelines and report potentially unsafe conditions
• Restocking all items as needed throughout the shift
• Other duties as assigned

Requirements
